SOUTHERN-FRIED-SALMON-PATTIES

 



Return to the world of culinary blogs with a flavor-packed recipe that won't fail to wow your guests: the Nice salmon croquette, the fish pairing perfectly with the ratatouille that smells good from the south. A summery recipe where the only difficulty you may encounter is while frying, hence the importance of drying the ratatouille. It's crunchy and spicy to perfection.. a real treat!


*Ingredients for 4 people:


°400 g salmon (loaf or fillet)

°1 red pepper

°1 zucchini

°1 onion

°1 clove garlic

°80 g flour + 1 tablespoon (or more)

°1 cup of water (about 20 cl)

°1 teaspoon baking soda

°5 cl of olive oil

°Thyme + bay leaf

°Split pepper or cayenne pepper

°Salt and Pepper

°frying oil


Melting chop onion in a fry pan wiith olive oil.

Adding sweet pepper. Let to cooking for 10 min; Adding chop zucchini. Adding thyme, bay leaf & chop garlic. Seasoning (salt, pepper, hot pepper to taste). Let to cook for other 10 minutes.

Removing salmon skin & adding its cubes as well. Adjust spices. Leave to cook for another 2 to 3 minutes. At the end of cooking, add a spoonful of flour (maybe more if any juice remains) in the preparation.


Mix the flour with baking soda in a mixing bowl. Pour water to get a quick frying mixture.

Form small croquettes using a large spoon.

Dip them in the mixture and then immerse them for two minutes in a bath of boiling oil to brown them.

Drain them on paper. Serving with salad
