Lemon-Blueberry-Bread

 



* Ingredients:


° 1 cup plus 1 tablespoon all-purpose flour

° 2 teaspoons baking powder

° 3 large eggs

° 1 cup granulated sugar

° 1 c yogurt or sour cream

° Half tsp salt

° Half tsp vanilla

° Half c vegetable oil

° 2 tsp lemon zest

 ° 1 1/2 c freshly or froz blueberries

+ Lemon Glaze / Syrup:

° 2 to 3 tsp lemon juice

° 1 c confectioners sugar


* Methods :


The 1 step:

Preheat oven 350*

Grease sides & bottom of loaf pan

The 2 step:

Sift all dried ingredients for baking

In bowl, blend all wet ingredients

3 step:

Adding dried ingredients

In a separate bowl, add 1 tablespoon of the flour to the blueberries and gently stir in the mixture

The fourth step:

Pour the mixture into the prepared pan

Bake for 50 to 55 minutes. If a toothpick comes out clean, the bread is ready

Fifth step:

Take it out of oven & let it cool for 10 min

Remove loaf from pan and allow to cool on cooling rack

Sixth step:

In saucepan on low heat, adding powder sugar to lemon juice & let it melting. Simmer for 3 minutes

Using a toothpick, poke holes all over the loaf, and from the top and sides

Seventh step:

Utilize pastry brush to brush lemon syrup on top &; sides.

Let it for 15 min before serve
